Roasted tomato salsa

Roma tomatoes are roasted with jalapeno peppers, garlic and onion until charred, then tossed with olive oil, cilantro and lime juice, processed until chunky and served with chips, $4.
Scorpion Pepper Salsa

Just 1 ounce of Moruga Scorpion chiles — which has been called the hottest chile in the world — is enough to add intense heat to 5 pounds of tomatoes, 1½ pounds of tomatillos, garlic, onions and cilantro in this salsa, available seasonally.

Tomatillo-avocado salsa is among the finishing touches for chips layered in signature cheese sauce, beans, pico de gallo, grilled corn, a blend of Mexican cheeses and sour cream, $12, or $14 with meat.

Offerings on the salsa bar, which is included with dinners, vary, with 10 offered Sundays through Thursdays and 14 on Fridays and Saturdays; they range from mild chunky to extra-hot habanero and include avocado and fruit salsas.
Salsa trio

Chipotle, tomatillo and roasted arbol salsas are served with tortilla chips and included with all meals.
