Free your oven on Thanksgiving

Want to free up some oven space on Thanksgiving? Here are a few small appliances that can help you shift the burden, recommended by representatives of Sur La Table and Williams-Sonoma. Most are available in their stores and on their websites and through other retailers.

Waring Digital Rotisserie Turkey Fryer ($500): Want to fry your turkey, but wary of trying to do it outdoors? This device lets you bring the process inside, and cook a 14-pound bird in 45 to 60 minutes.

Wolfgang Puck Pressure Oven ($249): You can use this countertop device to roast the turkey, freeing up space in the oven itself. A 14-pound turkey can be roasted in it in less than an hour.

Sansaire Sous-Vide Immersion Circulator ($199.95): Sous vide — the process of cooking food, sealed in plastic, in water for long periods at carefully controlled temperatures — hasn’t broken out of the restaurant kitchen and into the home because most of the devices used to do it were expensive and ungainly. The Sansaire is a tall, slim device that can be used with any vessel to contain the water. Use it to cook meats, eggs and more.

Pressure cookers (about $20 and up): Yes, the pressure cooker is back, and this isn’t the device you remember your mother or grandmother using; modern pressure cookers are safe and more sophisticated, and electric models don’t require stovetop space. Use it to speed the cooking of soups, stews, vegetables and meats.

Slow cookers (about $15 and up): Slow cookers, too, have changed over the years. Many are programmable, with digital controls, and can re-set themselves to keep food warm once the cooking cycle is finished. They can be used for anything from soup to dessert, either cooking the food or just keeping it warm.
