Dining Out: Hearthstone at Red Rock Resort

Hearthstone, from the Light Group and executive chef Brian Massie, took the group off the Strip and into the suburbs for the first time when it opened earlier this month. The restaurant offers an extensive charcuterie and cheese menu and a regular menu of comfort-food dishes with updated twists and more healthful aspects, such as a carved log filled with crudites. The majority of the dishes on the menu are prepared in the restaurant’s twin wood-burning ovens, where they cook over pecan and whisky-barrel woods. The interior is rustic, with used-brick walls, painted concrete floors and metal ceiling. A patio features a large fire pit. Here’s a sample of the menu:

Charcuterie and cheese: Prosciutto di San Daniele, $4; beer-cured salami, $4; chorizo, $4; spicy lamb coppa, $8; Humboldt Fog cheese, $5; Hudson Valley Camembert, $5; Bandaged Cheddar, $6; Vacherin Mont D’or, $7.

Snacks, salads and soups: Truffle popcorn, $6; deviled eggs, $6; roasted jalapeno hummus, $6; roasted tomato bisque, $10; wild arugula salad, $12; roasted heirloom beets, $14; Hearthstone Cobb, $11.

Shared plates, jars and toast: Tuna carpaccio, $14; scallop tartare, $14; wood-roasted clams, $15; butcher steak tartare, $14; hearth-cooked wings, $12; foie gras mousse, peanuts and jelly, $16; baked ricotta, $16.

Flatbreads: Marinara, $17; carbonara, $16; pepperoni, $17; mushroom, $16.

Entrees: Rotisserie chicken, $21; cast-iron N.Y. sirloin, $38; Wagyu short rib, $28; poached Alaska salmon, $27; pesto pasta, $21.
