Dining Pick of the Week: Jayde Fuzion

Jayde Fuzion

The M Resort, 12300 Las Vegas Blvd. South; 702-797-1000

Seonkyoung Longest, a self-taught home cook from South Korea, became executive chef of Jayde Fuzion after winning Food Network’s “Restaurant Express.” Now she is preparing her contemporary Asian dishes for us by combining Japanese, Chinese and Korean flavors. Several signature plates are crab salad with sweet chili sauce, pork belly lettuce wraps with kimchi and pan-fried pork and shrimp dumplings. Among the Fuzion specialties are honey walnut prawns, Korean-style lobster with fermented chili, Chinese lemon chicken, teriyaki salmon and beef and broccoli. Dim sum has steamed barbecue pork buns, pork and vegetable springs rolls, and kalbi ribs from Wagyu beef. There is tempura, noodle soups, wok-fried noodles, fried rice and salads, such as tofu, ahi poke, Asian cucumber and red onion, and Jayde chicken in ginger-soy vinaigrette. The sashimi and nigiri menu lists Bluefin tuna, tako (octopus), ikura (salmon eggs), freshwater eel and toro (premium tuna belly). Several hand rolls are Lady Luck, Rainbow, M Girl (shrimp tempura, cream cheese, cucumber, jalapeno), veggie and Jayde with spicy crab, asparagus and seared tuna. Featured desserts are Yuzu doughnuts with pistachios and lychee ice cream. Fuzion specialties begin at $14. Jayde Fuzion is open for dinner from 5 to 10 p.m. daily.
