Greens and Proteins offers vegetarian, vegan options

Greg Jarmolowich, who started Greens and Proteins with partner Jon Kinney in November 2011, modeled his chain after restaurants in California, where he said healthy food trends have been in place for a while. Trends are slowly coming to Las Vegas restaurants, he said.

Green and Proteins offers a mix of vegan, vegetarian and meat dishes. The chain has five restaurants in the Las Vegas Valley.

The restaurant has teriyaki grilled chicken and turkey burgers and vegetarian options such as veggie pizza and low-carb Caesar salad. Vegan meals include the G&P Veggie Burger, SW Tofu & Soy Chorizo Wrap, and Green Leaf Berry Blast smoothie.

“What we wanted to do is make sure that we did offer vegan and vegetarian food,” Jarmolowich said. “… if we did just vegan, we wouldn’t be in business today. There’s not enough audience to support a 10-15-hour restaurant.”

Jarmolowich described Las Vegas as a “meat-and-potato town” but said residents are discovering options as they educate themselves about food and health.

“We are conscious of the movement, and we are conscious of how to respond to change,” he said.

Recently, Greens and Proteins started looking for plant-based meat to add to its menu.

“It cooks like meat, it tastes like meat, it assimilates the taste of meat, but it’s plant-based,” Jarmolowich said.

The chain recently added tacos and bowls to its menu to shorten wait time.. Greens and Proteins offers vegan burgers with home-made veggie patties, a grilled veggie wrap, soups and salads.

“It’s going to be a while for us as a community to influence enough people to move toward that lifestyle, to get it over 50 percent,” Jarmolowich said. “And that, when that happens, we will see how the menu looks, but I’m sure it’s going to evolve with that change as well.”
