Sweetbreads plentiful in valley

What’s the difference between sweetbreads and sweet bread? Eons, if you’re unaware and mistake one for the other. The latter is suitable for breakfast and usually contains nuts. The former is the thymus gland (and sometimes pancreas) of a lamb, calf or pig, and when properly prepared, they’re a whole lot better than they sound.
And for M.C. Mills, who’s looking for a store that sells sweetbreads in small quantities of a pound or two, readers say they’re readily available in Las Vegas.
Patrick Smith e-mailed that Vons at 820 S. Rampart Blvd. in Boca Park carries them in its frozen-meat section. Dean B. Pomerantz e-mailed that he has found them at Rincon de Buenos Aires, 5300 Spring Mountain Road, and Liborio Market, 930 N. Lamb Blvd., and has seen them at King Ranch Market, which has multiple locations in the valley (he suggested calling ahead, and noted that in Spanish they’re called mollejas or mollejas de res).
And Chris Jensen of Village Meat & Wine, 5025 S. Eastern Ave., and Ron Lutz of The Butcher Block, 7625 S. Rainbow Blvd., said they both carry them. …
