Here’s how to make cabbage rolls ‘without all the work’

More on stuffed cabbage:

After a recent column in which readers recommended several valley restaurants that serve stuffed cabbage and cabbage rolls, Beverly R. Villeneuve sent this recipe for, as she said, “cabbage rolls without all the work.” I’ve adapted it slightly.

UNROLLED CABBAGE ROLLS

1½ to 2 pounds ground beef

1 large onion, chopped

1 clove garlic, minced

1 small head of cabbage, cored and chopped

Two 14½-ounce cans diced tomatoes

1 8-ounce can tomato sauce

½ cup water

½ cup rice

1 teaspoon ground black pepper

1 teaspoon salt (optional)

In a large skillet, cook ground beef and onion, stirring frequently, until beef is no longer pink and onion is translucent. Add garlic and continue cooking for 1 minute.

Add the cabbage, tomatoes, tomato sauce, water, rice, pepper and salt, if using. Bring to a boil. Cover and simmer for 20 to 30 minutes, until cabbage is tender and rice is cooked.

Serves 6 to 8.
