Taste of the Town: Back to the cabbage patch for another simple recipe

Continuing our spate of stuffed-cabbage coverage, we have another recipe, this one from Taste of the Town regular Paulette Juryn:

UNSTUFFED CABBAGE

2 tablespoons butter

¼ cup each chopped celery, green pepper and onion

½ pound lean ground pork

½ pound lean ground beef

2 cups cooked rice

1 small head of cabbage, chopped

1 to 2 garlic cloves, minced

1 teaspoon salt

¼ teaspoon black pepper

2 tablespoons parsley

One 8-ounce can tomato sauce

One 16-ounce can chopped tomatoes

Melt the butter in a skillet and saute the vegetables until softened. Add the pork and beef and cook, stirring, until meat is no longer pink.

Add the rice, cabbage, garlic, salt, pepper, parsley, tomato sauce and tomatoes. Bring to a boil. Cover and simmer for 20 to 30 minutes, or until cabbage is tender.

Stephanie St. in Henderson (although she said she thought they may have been only 4 pounds). There’s another WinCo at 6101 N. Decatur Blvd.
